Among the huge number of homemade baking recipes there are very original and interesting. Cake with curd balls - one of them. It is not only tasty and healthy, but also very beautiful.

Cake with curd balls - the basic principles of preparation

A chocolate biscuit is prepared for the cake, and the cottage cheese balls remain white. It is dark dough in combination with white balls that make dessert unique.

Start by making balls. They take good quality cottage cheese, preferably homemade. To make the curd mass homogeneous, grind the curd through a fine sieve. Combine it with sugar and eggs and knead with a spoon or a hand blender. Balls of the same size are formed from the resulting mass and sent to the refrigerator.

The biscuit is made according to the classic recipe from eggs, flour and sugar. Cocoa powder is added to the finished dough and mixed.

The chocolate dough is transferred to the mold. On top of the curd balls spread, slightly sinking them into the dough. Bake for an hour at 180 C.

Balls of cottage cheese can be prepared with semolina or coconut.

Cake can be soaked in cream. The surface is decorated with whipped cream, glaze or meringue.

Recipe 1. Chocolate cake with curd balls

Ingredients

four fresh eggs;

a pinch of baking powder;

60 g of sugar;

two bags of vanilla sugar;

50 g of chocolate;

a pinch of salt;

60 g of flour;

75 g of cocoa;

60 g of starch.

Balloons

250 g of cottage cheese;

starch - 75 g;

50 g of sugar and coconut flakes;

two yolks.

Cooking method

1. Rub the cottage cheese through a fine sieve. Add sugar, coconut and egg yolks to it. Thoroughly grind everything into a homogeneous mass. Roll up the balls with your hands, put them in a separate container and send them to the refrigerator.

2. Add half the granulated sugar to the yolks and whisk until white.

3. Start whipping the proteins in a separate bowl, adding salt and gradually adding sugar to a stable, strong foam. Melt the chocolate and pour it into the beaten yolks. Now slowly introduce the proteins, slowly mixing. Combine the flour in a separate cup with cocoa, vanilla, baking powder and starch. Sift the dry mixture directly into the liquid mixture. Stir the mass.

4. Cover the baking dish with a thin layer of oil from the inside. Put the dough in it. Put the curd balls on top, slightly sinking them. Bake the cake at 180 ° C for an hour.

Recipe 2. Cake with cottage cheese balls with prunes

Ingredients

Dough

sesame;

five fresh eggs;

poppy - 50 g;

200 g of granulated sugar;

a bag of vanilla;

300 g of premium flour;

20 g baking powder;

half a pack of drain oil .;

50 g of cocoa.

Balloons

180 g of cottage cheese 9%;

a bag of vanilla;

80 g of sugar;

yolk;

30 g coconut flakes;

pitted prunes.

Cream

30 g of lemon peel;

100 g of sugar;

sour cream 25% - 0.5 l.

Decoration

jelly for cake;

kiwi, peach and plum.

Cooking method

1. Combine all the ingredients for the balls in a deep bowl and grind to a curd.

2. Wash the prunes, pour boiling water and leave for half an hour. Drain the infusion, and dry the prunes on a napkin. Make a small cake out of the curd mass. Put the prunes in the middle, connect the edges and roll the ball. Put them in the freezer for half an hour.

3. Combine the eggs with sugar and vanilla. Whip everything into lush foam. Now pour the melted butter. Pour flour with baking powder gradually and stir until smooth. Divide the dough in half. Add poppy seeds in one part and cocoa powder in the other. Stir.

4. Pour dough with poppy seeds into a parchment-lined mold. Put the curd balls on top. Pour them with chocolate dough. Sprinkle with sesame seeds. Bake at 200 C for forty minutes.

5. Cool the finished cake, wrap it with parchment, making high sides. Make a few skewers with a skewer and soak in syrup. Beat with a mixer at high speed sour cream with sugar and zest. Put the cream on the cake and take in the refrigerator for three hours. Remove the parchment.

6. Wash fruits, remove seeds and cut into thin slices. Lay them nicely on the surface of the cake and pour the jelly, having prepared it according to the instructions on the package. Put in the refrigerator for a few hours.

Recipe 3. Cake with curd and vanilla balls

100 g of wheat flour;

80 g of sugar and cocoa;

four eggs.

starch - 80 g;

400 g of cottage cheese;

nuts

vanilla sugar - 15 g.

Glaze;

80 g of cocoa;

50 g of sour cream and drain oil .;

100 g of granulated sugar.

Cooking method

1. Put the cottage cheese in a deep bowl, pour sugar and rub it with a tablespoon. Then add the egg, starch sugar. Knead the mass again. We form balls from it with wet hands. Inside each we put the kernel of the nut.

2. Cover the baking dish from the inside with a thin layer of oil and spread the curd balls on the bottom.

3. For the test, grind the yolks with white sugar. Mix flour with baking powder and cocoa. Knead a homogeneous dough. We introduce proteins whipped into a dense foam, gently mixing. Fill the curd balls with the dough. We send the form to the oven for forty minutes. Bake at 180 C.

4. Dissolve the butter in a water bath, add sugar mixed with cocoa to it. Keep in a water bath, continuously mixing, until sugar is completely dissolved. Add sour cream, mix. As soon as the icing begins to boil, remove it from the stove.

5. Cool the cake and pour it with glaze, distributing it over the surface and sides. We keep the cake in the refrigerator for a couple of hours.

Recipe 4. Cake with curd balls "Zebra"

Ingredients

egg yolk;

300 g of cottage cheese;

80 g of granulated sugar;

two packs of coconut flakes.

Dough

60 g of cocoa;

200 g margarine;

milk - 80 ml;

150 ml sour cream;

500 g of wheat flour;

three eggs;

10 g baking powder;

egg white;

stack Sahara.

Cream

? liter of milk;

? stack Sahara;

70 g of flour.

Cooking method

1. In a deep bowl, combine the cottage cheese with sugar, coconut and yolk. Grind everything with a hand blender into a curd mass. Form from it balls of the same size and send for half an hour to the freezer.

2. Whip soft margarine with sugar and add one egg and one protein each, without stopping the whipping process. Add milk and sour cream. Shuffle. Pour flour with baking powder. Divide the dough in half. Add in one piece of cocoa.

3. Lubricate the rectangular shape with butter and grind with flour. Pour half of the white dough. Spread chocolate over white. Lay the cottage cheese balls on top, crushing them lightly into the dough. Bake at 200 C for forty minutes.

4. In a saucepan, mix the flour with sugar. Pour in the milk gradually, constantly stirring vigorously. Cook until thickened over low heat. Add oil at the end. Cool the custard.

5. Cooled cake pierce in several places with a wooden stick. Coat it with cream and mash cocoa.

Recipe 5. Cake with curd balls and dried apricots in a slow cooker

Ingredients

baking powder - sachet;

sugar - 50 g;

salt;

four fresh eggs;

cocoa powder - 80 g;

starch - 60 g;

flour - 60 g;

1. Sprinkle the oiled bowl with flour. Soak dried apricots in boiling water for ten minutes. Combine cottage cheese with starch, egg yolks and sugar. Grind everything with a spoon into a homogeneous mass. Dry the dried apricots, and cut it into cubes. Form the same balls. Inside each put a piece of dried apricots. Put the balls on the bottom of the container.

2. Divide the dough eggs into yolks and squirrels. Grind the yolks with sugar until white. Melt the chocolate in a water bath and put it into the yolks. Shuffle. Add cocoa flour, baking powder, salt and starch here. Knead the dough. Introduce whipped whites into it and mix gently. Fill the balls with dough. Cook the cake in the baking mode. Running time for an hour.

3. Remove the finished cake using the steam cooker. Chill. Soak gelatin for about ten minutes and dissolve it in a water bath. Rub the cottage cheese with sugar, add sour cream and the remaining dried apricots. Shuffle. Beat the whites and add gelatin to them. Combine with the curd mass.

4. Place the cake in a detachable form, and pour the curd cream on top. Put in the refrigerator. Then draw a sharp knife between the edge of the cake and the sides of the mold. Take out the finished cake.

Recipe 6. Cake with cottage cheese balls

Ingredients

baking powder;

flour - 60 g;

cocoa - 80 g;

starch - 60 g;

sugar - half a glass;

chocolate - 1/2 tiles;

four eggs.

Balloons

egg;

50 g of semolina and coconut;

100 g of white sugar;

soft cottage cheese - 250 g.

Glaze

cream - 50 ml;

drain. oil - 30 g;

? chocolate bars.

Cooking method

1. Grease the mold and sprinkle with semolina. Turn on the oven at 180 C.

2. Put all the ingredients for the curd balls in a bowl. Kill them with a submersible blender into the mass and form the same balls from it. Put them in a form.

3. Whisk the yolks with half the white sugar. Melt the chocolate in a water bath, cool slightly and put in the yolks and mix. Combine the flour with starch, cocoa and baking powder. Add the dry mixture and knead the dough. Enter the whipped whites in portions. Shuffle. Fill the balls with dough and place in the oven.

4. After forty minutes, remove the cake and cool. Boil the cream in a saucepan, add the chocolate broken into pieces and stir until it disperses. Cool slightly and rub with oil. Cover the cake with icing and garnish with coconut.

Cake with chocolate balls - tips and tricks

Form balls with wet hands so that the mass does not stick to your hands.

To get a dense homogeneous curd mass, interrupt the curd with a submersible blender.

Inside the balls you can put a nut, dried fruit or a piece of chocolate.

So that the cake does not turn out dry, soak it with syrup or fruit juice.
