Cake "Firewood under the snow" - general principles of preparation

At the heart of the cake is "firewood", that is, straws with filling. Cherry is most often used for filling, but this is not necessary; you can take cherries and other berries. You can knead the dough for logs shortbread, as in the classic version, but there are also recipes from puff pastry and even pancakes. They are also very tasty, have a right to exist, the most interesting can be found just below.

What cream is usually used:

· On sour cream;

Sour cream with cream;

· Sour cream and condensed milk.

No chocolate, cocoa, juice is added to it. Sour cream is used oily and thick, which does not leak. It is good to take a product of 30% fat. The cream must certainly have a white color, imitate snow. Sweet firewood stacked slide, smeared. Next, the dessert is cleaned for several hours in the refrigerator, where it is soaked and slightly precipitated. It is better to let it stand for a day, it will turn out tastier.

Cake "Firewood in the snow" on sour cream

One of the recipes, which can be safely called classics. The dough for such a cake, “Firewood under the Snow,” is prepared with sour cream, it turns out quite friable, tender. Ideal with cream and cherries.

Ingredients

0.24 kg of oil;

· 0.2 kg of sour cream;

0.45 kg of flour;

0.22 kg of sugar;

· 5 grams of cultivator.

For cream:

· 0.7 liters of sour cream;

· 0.2 kg of powdered sugar.

For the filling, you need about a kilogram of berries and an incomplete glass of sugar.

Cooking method

1. Engaged in berries. We take out the seeds from the cherries, leave them in a colander, let the juice drain.

2. Beat softened butter and granulated sugar, gradually introduce sour cream and a couple of pinch of salt, pour the flour with a cultivator. Knead the dough, it will be sticky. Put in the refrigerator for an hour. Cover with a packet.

3. Divide the dough into fifteen balls, round each one, roll it into a long strip of about 20 centimeters, a width of about 7 centimeters. We spread a row of cherries, sprinkle with sugar, pinch to get a tube. Transfer to a baking sheet.

4. We sculpt all the rest of the "firewood". Spread on sheets, bake at 200 degrees until tender. Cool well. The berries inside should also be cold.

5. Mix sour cream and powdered sugar. If desired, a little vanillin can be added.

6. On a flat dish we spread firewood with cherries. First, 5 pieces, coat, with a second layer of 4, then 3, 2 and 1. With the remnants of the cream, coat the entire dessert, leave the cake in the refrigerator for at least seven hours, let it soak.

Cake "Firewood in the snow" from puff pastry

It doesn’t matter if there is no time to cook the dough. This is a simplified version of the "Firewood in the Snow" cake. We take the puff pastry for it and always without yeast, otherwise the logs will be too thick. The cream is again on sour cream with sugar, for the filling you need cherries in your own juice or in syrup.

Ingredients

800 g of dough;

· 0.9 liters of sour cream;

· Cherry in its juice;

· 3 tablespoons of cognac;

180 g of sugar.

Cooking method

1. Remove the cherry from the juice of the syrup, let the liquid drain, then mix with cognac. If the berries are sour, then it will be possible to add a little sugar in the assembly of logs.

2. Roll out the puff pastry, cut 15 strips, make a width of about seven centimeters, the length is arbitrary, but the same between the pieces. We spread cherries, sprinkle with sugar, if necessary. Glue the edges of the strips to make logs.

3. Transfer the dough with cherries to a baking sheet, be sure to leave a distance, since after baking the firewood will increase in size. Cook at 220 degrees until rosy color.

4. We cool the base of the cake and during this time we make a cream of sour cream and granulated sugar, you can use the powder.

5. We collect the cake, laying and spreading the dough, as in the recipe above. Let’s soak, but we keep “Firewood in the snow” exclusively in the refrigerator.

Cake "Firewood in the snow" on beer

The dough for this cake is prepared on beer, it turns out to be very tasty and somehow resembles cakes for the Napoleon cake. Cream of oily sour cream. The number of cherries is not indicated, we take fresh or canned berries, how many will go.

Ingredients

· 0.5 kg butter;

· 0.5 kg of beer;

Flour;

Cherry

· 1 liter of fat sour cream;

210 g of sugar.

Cooking method

1. Beat the softened butter, gradually adding beer, and then fill in the flour. We add it until we get a pretty cool dough.

2. Immediately divide the cooked mass into fifteen parts, after which we cool the hour in the refrigerator or twenty minutes in the freezer.

3. Roll out strips of dough, lay out cherries, sprinkle with sugar if desired. Sculpt closed logs. Spread on a baking sheet and bake at 200 degrees.

4. Beat sour cream with sugar, but it is important not to overdo it. If small grains suddenly appear, we stop right away, this (most likely) is already oil. In the cream, optionally add vanilla or some essence.

5. From the cooled logs and cream, we collect a delicious cake with a slide, let it stand and soak.

Cake "Firewood in the snow" from pancakes

The recipe for the lazy cake "Firewood in the Snow", which is prepared from simple thin pancakes. We bake them according to any favorite recipe. The cream is prepared on the basis of sour cream and cream, it turns out to be very delicate, airy, and soaks well. For such a cake, it is not necessary to take cherries, with strawberries, too, everything turns out.

Ingredients

· 15 pancakes;

500-600 g of berries;

300 g of sour cream;

200 g cream;

1 g vanilla;

180 g of sugar. powders.

Cooking method

1. Mix sour cream with icing sugar and vanilla. We are leaving. Beat cream, gradually introduce sour cream. The cream should be thick. You can use sand instead of powder, but it will need to be thoroughly dissolved in sour cream.

2. Wash and dry the berries. If cherry will be used, then take out the seeds. When using strawberries, we cut the berries larger.

3. Each pancake is lightly greased with cream, we just make a strip, lay in a row of berries, twist the tubes.

4. We lay down the cake with a slide, spreading all the tubes with butter cream. Pancakes are soaked quickly, leave them for half an hour.

Coconut cake "Firewood in the snow" from puff pastry

A very delicate and amazingly delicious version of the cake, which is prepared from puff pastry. You can, of course, knead it yourself, but it's easier and faster to buy in a store. In total, about half a kilogram is needed, but we look. If it is not possible to thinly roll out the formation, then it may take more or less logs. We use coconut flakes without fail of white color.

Ingredients

500 g of dough;

380 g cream;

150 g of condensed milk;

650 g of cherries;

50 g coconut flakes;

150 g of sugar.

Cooking method

1. We free cherries, cover with sugar and put on the stove, boil for about three minutes, then throw in a colander. We use the sling for any other purpose, you can just make compote out of it, cool the berries. If desired, add a little cognac when cooking, literally one tablespoon.

2. Thinly roll out the dough, cut into strips, lay out cherries, sculpt the logs. Bake at 220 degrees, cool.

3. Whip the cream. As soon as they turn into steep foam, pour in a little condensed milk. Add a spoonful of coconut flakes to the cream, stir. If the mass is liquidish, then more can be added.

4. Putting the cake together. Coat the rest of the cream on top and fill the firewood with snow from coconut flakes. Leave to soak for 8 hours.

Cake "Firewood in the snow" with prunes and nuts

Another version of homemade shortcrust pastry cake with prunes and walnuts. Not the easiest, but amazingly delicious dessert. If desired, add a little alcohol to the filling, you can just sprinkle prunes with cognac.

Ingredients

· 2.5 tbsp. flour;

0.25 kg of margarine;

· 0.25 kg of sour cream;

400 g of prunes;

· 1 tbsp. nuts

· 700 g sour cream;

180 g of sugar.

Cooking method

1. Wash the prunes. If it is very dry, it is better to soak it. But do not use too hot water. Then we cut dried fruits, mix with chopped walnuts.

2. Cooking the dough. Mix whipped margarine with sour cream, add flour. Nothing more is needed. We put the whole lump in a bag, remove it to cool.

3. We take out the dough, give the shape of a rectangle and roll out into about the same layer. Cut strips, lay out on each path from prunes with nuts. We make logs, send to a baking sheet.

4. Bake the wood with the filling for about 20 minutes at 200 degrees, then cool.

5. Beat sour cream with sugar until it is completely dissolved. We collect a slice of cake from baked tubes. We set it to soak for several hours, and preferably all night.

Cake "under the snow" - useful tips and tricks

· If the Firewood is too acidic, you can use it mixed with pieces of sweet fruit or canned pineapple. They are also perfect for making a wonderful cake.

· In many types of dough, butter is used and it goes quite a lot. You can replace the product with ordinary margarine, the cake will be much cheaper. Also on sale is cooking oil, which is also suitable.

· If it is not possible to buy sour cream over 25%, then you can simply weigh any product on a dense fabric. Excess serum will certainly drain, but it will take several hours.

· Do not lubricate hot, even warm cakes with sour cream. Sour cream from them will simply merge into a dish, nothing will be soaked, the cake will be hopelessly spoiled.
