Dishes for Easter - the basic principles of cooking

Easter table should emphasize the greatness of the holiday. Wealthy families served forty different dishes, which symbolized the forty days of Lent. By tradition, the Easter table must have three dishes: Easter cake, Easter and painted boiled eggs. Many people confuse Easter cake with Easter, but these are completely different dishes. Kulich is a pastry made from pastry, which is decorated with icing, and Easter is prepared from cottage cheese.

In the old days, the Easter table was not cleaned all day so that any guest could taste the treats.

The preparation of the festive table began a week before the great holiday. Easter cakes were baked, eggs were painted, home-made sausages and other dishes were prepared.

In addition to the required dishes, the table serves:

• A variety of fish, vegetable and meat salads.

• Cold snacks. Jellied meat or fish, pastes, sandwiches, etc.

• Hot snack. Pancakes stuffed with caviar or meat, meat rolls, meatballs, chops.

• Meat dishes. Here you can cook meat in any way: bake in the oven, fry on a fire or stew.

• Desserts: cakes, jelly from berries and fruits, cakes, pastries, etc.

But it is worth remembering that Easter is, first of all, a church holiday, and not a reason for a feast. Care must be taken, especially for those who held strict fasts. After all, after prolonged abstinence, there is a risk of overeating and damage to health.

Recipe 1. Curd Easter

Ingredients

homemade cottage cheese - a kilogram;

candied fruits and raisins;

high-quality milk chocolate - bar;

soft drain. oil - 100 g;

sour cream - 200 g;

sugar - 100 g.

Cooking method

1. Use only real homemade cottage cheese. Rub it twice through a sieve or sieve, combine with butter and sour cream.

2. Stir until smooth. Then add the egg, grated chocolate and sliced ​​candied fruit into it. Wash the raisins and pour hot water. Leave on for ten minutes. Then drain the infusion. Dry the raisins and add to the curd mass.

3. Stir until the whole mass has a uniform color.

4. Cover the special form with a thin cloth or gauze. Put the curd into a mold and cover with a plate. Install oppression from above. Soak Easter in the refrigerator for a day.

Ingredients

1. Place the eggs in a saucepan, fill with water and set on fire. Cook from boiling for ten minutes. Drain the hot water and cool the eggs under a stream of cold water.

2. Peel the eggs, gently cut in half, remove the yolks. Leave one for decorating snacks. Connect the rest with half a sprat. Beautiful and strong sprats leave. Peel and finely chop the onion. Passer in vegetable oil until light brown. Add onion frying and mayonnaise to the yolks. Rub well with a fork until smooth.

3. Fill the egg halves with the filling. Take one stuffed half of the egg, put one sprat on top and cover with the second half of the egg. Garnish with finely chopped greens and grated yolk.

Recipe 3. Easter Chicken Salad

Ingredients

mayonnaise;

chicken leg;

ten pieces of prunes;

three boiled eggs;

pickled cucumber.

Cooking method

1. Wash the chicken leg under the tap and boil. Remove the prepared meat from the broth, cool and disassemble into fibers. Discard skin and bones. Place the chicken meat evenly in the salad bowl. Make a mayonnaise net on top.

2. Remove the pickled cucumber from the brine, chop on a coarse grater. Arrange in a salad bowl over chicken and pour with mayonnaise.

3. Boil dried prunes in boiling water. Drain the infusion and squeeze. Finely chop the prunes and lay out with the next layer.

4. Boiled eggs, peel and grind. Put on top of prunes and make a mayonnaise grid on top. Smooth the top layer of lettuce. Garnish with prunes or green peas.

Recipe 4. Beef aspic "Easter eggs"

Ingredients

600 ml of meat broth;

boiled carrot;

250 g of boiled beef;

parsley greens;

12 eggs;

25 grains of canned corn;

25 g of gelatin.

Cooking method

1. Wash the beef, cut the films and excess fat. Put the meat in a saucepan and set to boil over medium heat. Ten minutes later, salt and pepper.

2. Rinse the eggs in the shell thoroughly. Make a small hole on top of the egg and drain the contents.

3. Soak the gelatin in 150 grams of cool water and wait for it to disperse. Then strain the liquid through cheesecloth.

4. Filter the beef broth. Introduce gelatin into it with a thin stream. Bring the mixture to a boil, but do not boil! Remove and cool.

5. Pour the fourth part of each egg shell with broth. Place the eggs vertically in the refrigerator and leave them there until completely frozen.

6. Cut the beef into cubes. Lay the pieces of beef, parsley leaves, corn and finely chopped boiled carrots on top of the frozen jelly.

7. Pour in the remaining broth and place the eggs in the refrigerator again. When the second layer of jelly has completely hardened, carefully remove the shell and put the jellied eggs on the dish.

Recipe 5. Chicken with puff prunes

Ingredients

300 g of prunes;

spices for chicken;

two chicken breasts;

sea ​​salt;

150 g of Dutch cheese.

Cooking method

1. My chicken fillet, remove the skin and bones, cut into thin plates. Size doesn't matter. Thick plates are slightly beaten off with a kitchen hammer.

2. Cover the baking sheet with foil, bend the edges over the sides of the baking sheet. The finished dish can be easily transferred to the dish by holding the foil.

3. We spread on the foil greased with vegetable oil the first layer of chicken fillet. Salt and crush with spices. Spread pitted prunes on the chicken layer. Pre-steam it and open each in the form of a book. Sprinkle a layer of prunes with cheese chips. Then repeat the layers in the same sequence. You should get 3-4 layers. The top layer should be chicken. Grease it with mayonnaise. Cover the dish with foil and put in the oven for an hour. Cook at 180 C.

Recipe 6. Meat Bread with Olives

Ingredients

two kg of minced meat;

nutmeg;

half a liter of milk;

a bunch of greenery;

200 ml cream;

table salt;

three eggs;

jar of olives.

Cooking method

1. Rinse a bunch of greens, dry slightly and crumble finely. Add the chopped greens to the minced meat, salt, pepper and mix. Pour in milk and cream gradually and whisk everything with a submersible blender.

2. Beat the eggs in foam, carefully introduce into the minced meat and mix. It should be a liquid mass. Cut the olives into slices and put them in the minced meat. Stir and put the resulting mass into a baking dish, greasing it with vegetable oil. Cover with foil and bake at 200 ° C for 20 minutes. Remove the foil and keep in the oven until browned.

Recipe 7. Pork baked with apples

Ingredients

kg pork tenderloin;

sea ​​salt;

70 ml of dry white wine;

olive oil;

green sour apple;

lard;

30 g of black pepper peas.

Cooking method

1. We wash a rectangular piece of pork tenderloin and dry it with paper towels. With a sharp knife, we cut the meat across, without cutting it to the end.

2. Pork fat is cut into very thin slices. I wash the apple and cut it in half, remove the core, cut the halves across thin slices.

3. Connect the slices of bacon and apple in pairs, put them into each cut in the meat. To prevent a piece of meat from breaking up, pierce it with small diameter bamboo skewers, soaked in cold water in advance.

4. Put the meat in a greased form, sprinkle with oil, pepper and salt. We put pork with apples in the oven preheated to 200 C for 45 minutes. After the allotted time, pour the meat with wine and bake another 15 minutes. We take out the pork from the oven, remove the skewers, put it on a flat dish, arrange with greens and serve.
