General principles for the preparation of the liver

Before cooking, this product requires a mandatory initial treatment, namely, thorough washing and cleaning. Depending on the type of dish, the cooking time varies, but more often it does not exceed 30 minutes.

A well-prepared liver should be soft and juicy. To preserve juiciness, the liver is often prepared with gravy, which is made from the juice released during braising, with the addition of a small amount of wheat flour or starch. Ideal seasonings that improve the taste of the liver are black pepper, garlic, thyme, nutmeg, paprika, rosemary, basil, oregano, etc.

Baking recipes with liver

Baking with the liver. Option 1: Liver Pie

This quick-to-cook pie will serve as an excellent dish for lunch or as an interesting snack for a feast.

Ingredients:

• 350 g of beef liver;

• 1 PC. onions;

• 5 eggs;

• 250 ml of kefir;

• 240 g of mayonnaise;

• 240 g of wheat flour;

• 20 ml of sunflower oil;

• 0.5 tsp salt;

• 0.5 tsp soda;

• spices for filling (to taste).

Cooking method:

1. Soak the liver in milk for about half an hour and then rinse well.

2. Fill the pan with water and put the liver there. Cook until cooked for about half an hour.

3. Cook 3 eggs.

4. Peel the onion and cut into small cubes. Fry in a pan with sunflower oil until golden brown.

5. Grind the eggs and liver, add the onions and mix everything well. Season with salt and spices to taste. The filling is ready!

6. To prepare the dough, dissolve the soda in kefir and leave for 7 minutes.

7. Add mayonnaise, 2 eggs, salt and mix well.

8. Add flour in portions, kneading the dough well. The dough should not be very hard.

9. Lubricate the baking dish with oil and pour in half of the finished dough. Then lay the filling evenly and cover it with the rest of the dough.

10. Bake at 180-190С until fully cooked (approximately 40 minutes, check the readiness with a match).

11. Cut the cooked pastry with the liver into pieces and serve warm. Enjoy your meal!

Baking with the liver. Option 2: Chicken Liver Potato Pie

This baking recipe with liver makes up a wonderful flavor combination of chicken and potatoes. Bird lovers are clearly worth a try!

Ingredients:

• 400 g chicken liver;

• 2 large onion heads;

• 1-2 potatoes;

• 1 + 0.5 tsp salts;

• black pepper (to taste);

• 500 + 10 g of wheat flour;

• 100 g butter;

• 30 g of vegetable oil;

• 250 ml of kefir;

• egg yolk (for greasing dough).

Cooking method:

1. Cut the chilled butter into cubes and mix with a pound of wheat flour.

2. Pour in kefir, pour 1 tsp. salt and knead the dough well. It should become soft and supple.

3. Refrigerate for half an hour.

4. Rinse the chicken liver thoroughly, cut into portions and add the remaining salt and pepper.

5. Roll each slice in 10 g flour and send to fry in a hot skillet with vegetable oil until a dense state.

6. Peel the onion, cut into small pieces and place in a skillet. Toast for about 5 minutes.

7. Peel and straw the potatoes. Place in a skillet and remove it from the heat. Let the filling cool.

8. Divide the finished dough into two parts and roll both well to the size of a baking sheet.

9. Lubricate the pan with sunflower oil and transfer one layer of dough to it.

10. Spread the filling evenly and coat it with a second layer of dough. Press the edges of the pie well.

11. Lubricate the surface with egg yolk and place the pan in the oven. Bake a pie at 210C for 45 minutes.

12. Serve the cooked pastries with the liver in warm pieces. Enjoy your meal!

Baking with the liver. Option 3: Finnish Pie

One of the variations of recipes for baking with the liver is a traditional Finnish pie. Delicate, simple and very satisfying!

Ingredients:

• 0.5 kg of liver;

• 0.5 kg puff pastry;

• 100 g of fat;

• 2 pcs. onions;

• 100 g of rice or pearl barley

• egg yolk (for greasing dough);

• seasonings (to taste).

Cooking method:

1. Soak the liver in milk for half an hour, then cook and cut into small pieces.

2. Cook the cereal until cooked.

4. Peel the fat and cut it into small squares.

5. Combine the cereals, liver, onions and lard, add seasonings to your taste and mix everything thoroughly.

8. Lubricate the cake with egg yolk.

Ingredients:

• 1000 g of beef liver;

• 3 eggs;

• 350 g of wheat flour;

• 0.5 l of milk:

• 2 pcs. onions;

• 2 carrots

• sunflower oil (for baking pancakes);

• 1 pack of mayonnaise;

• salt, pepper (to taste).

Cooking method:

1. Wash and clean the liver thoroughly and make minced meat using a combine or meat grinder.

2. Add milk, flour, eggs to the minced meat, salt and pepper to taste and stir until smooth.

3. Heat a pan with sunflower oil and bake liver pancakes (determine the thickness of the pancake at your discretion). Cool ready-made pancakes.

4. Peel and chop the onion into thin semicircles.

5. Peel the carrots and grate.

6. In a preheated pan, fry the onions and carrots. Cool the filling.

7. Form a cake: take a liver pancake, grease it with mayonnaise and cover with a carrot-onion layer. Repeat the procedure until all ingredients are used. The festive cake is ready!

Baking with the liver. Option 5: liver pies

One of the indispensable recipes for baking with the liver is delicious homemade pies.

Ingredients:

• 500 g chicken liver;

• 2 pcs. onions;

• 300 g of wheat flour;

• 5 g of fast-acting yeast;

• 150 ml of fatty kefir;

• 1 egg;

• 3 tbsp. l sunflower oil;

• 2 tbsp skim milk;

• 1 tbsp. l granulated sugar;

• 1 tsp salts;

• egg yolk + 2 tbsp. milk (for greasing pies).

Cooking method:

1. Wash and clean the liver.

2. Peel and finely chop the onion.

3. Fry the onion with the liver in sunflower oil and then simmer until fully cooked (approximately 20 minutes).

4. Using a harvester or meat grinder, make minced meat from roasting.

5. Make a dough for the pies: heat the milk, add the yeast and sugar, and mix well. Cover and leave in a warm place for 15 minutes.

6. Mix kefir and vegetable oil and lightly warm.

7. Stir in one egg.

8. Add the dough and mix well.

9. Add salt and flour and notice the dough. Leave covered in a warm place for half an hour.

10. When the dough rises well, form pies: make a cake from a tablespoon of dough, add the filling and close the pie.

11. Transfer the pies to a greased baking sheet, cover with a mixture of yolk and milk and let rise a little more (about 10 minutes).

12. Bake pies in the oven at 180C for about 20-25 minutes. Enjoy your meal!

Baking with the liver. Option 6: liver roll

This baking recipe with liver will be another great snack for a festive feast.

Ingredients:

• 0.5 kg of liver;

• 4 chicken eggs;

• 2 tbsp. l wheat flour;

• 1 tbsp. l decoys;

• 200 ml of milk;

• 3 tbsp mayonnaise;

• 1 PC. onions;

• 1 PC. garlic

• 2 carrots;

• 3 tbsp. l sunflower oil;

• seasonings (to taste).

Cooking method:

1. Rinse the liver and cut into portions.

2. Use a combine to mix the liver and 2 eggs until smooth.

3. Pour seasonings, semolina and flour and pour in milk. Mix everything thoroughly and leave for 10 minutes.

4. Spread evenly over the baking sheet covered with parchment and send to bake at 180C for 20 minutes.

5. 2 hard boiled eggs, peel and cut into cubes.

6. Peel and chop the onion and garlic.

7. Peel and grate the carrots.

8. Fry onions, garlic and carrots in a pan with vegetable oil.

9. Remove the baked liver cake, transfer to a towel and remove the parchment.

10. Coat the cake with mayonnaise, evenly distribute the eggs and fry and carefully roll the roll.

11. Transfer the roll to the foil and send again to bake at 200C for 7-10 minutes.

12. Cool the finished baked goods with the liver and cut into portions. Enjoy your meal!
