Tiramisu cake at home - general principles of preparation

The cake is prepared in layers of cake and cream, but has a special combination of flavors. To achieve it, it is important to know the basic rules and strictly observe the proportions of the ingredients.

General principles of cooking Tiramisu:

• Cakes. Usually they are biscuit. Homemade cakes are baked in thin layers, usually the dough is spread on a large baking sheet, then pieces of the desired size are cut. You can bake a biscuit in a round shape and cut into several layers, but the absence of a crust on the layers will be noticeable. Use of purchased thin biscuits is allowed.

• Cream. In the classic recipe, the layer is prepared from mascarpone with cream. But this is optional. There are many equally tasty options with cottage cheese, condensed milk, proteins, chocolate.

• Impregnation. Typically, boiled coffee is used, but you can also take instant coffee. Sugar, cognac, cinnamon are added to the impregnation, or just a pure drink is used. It is important to cool it before use.

• Top. Tiramisu is never decorated with cream flowers and is not covered with glaze. The top of the dessert is smeared with the same cream as the layers, then sprinkled with dark cocoa powder.

Ready dessert is left for impregnation, but it is not worth keeping it for a long time. Tiramisu tastes better while fresh. Therefore, do not cook it a few days before the event.

Tiramisu cake: a recipe at home with mascarpone

The world famous version of Tiramisu cake. Homemade dessert recipe with cream mascarpone cheese and coffee sponge cake.

Ingredients

• 115 g flour;

• 30 ml of boiled coffee;

• five eggs;

• 115 g of sugar;

• 10 g of coffee.

Butter cream:

• 45 g of boiled coffee;

• 3 yolks;

• 380 g of mascarpone;

• 190 ml cream;

• 130 g of powder.

For impregnation of biscuit: 0.5 tbsp. coffee, 2 l. sugar, 0.5 l. cognac. A spoon of cocoa to sprinkle on a cake.

Cooking

1. In hot coffee for the test, we throw a spoonful of soluble, stir, leave to cool. We prepare the usual biscuit dough: beat eggs until fluffy foam, throw sugar in portions, continue whipping at high speed. At the end we introduce the flour and immediately pour out the coffee, which should have already cooled down. Pour on a baking sheet covered with parchment, spread a layer of about half a centimeter, and send it to baking. Thin biscuit takes 10 minutes at medium temperature. Cooling down.

2. For cream, combine the raw yolks with sugar, add coffee and put on the stove, cook. We stir constantly, do not leave the cream. As soon as the mass thickens, remove, cool.

3. Whip the cream into the foam, add the cooled cream and cream cheese, done!

4. For impregnation, mix sugar with coffee and cognac.

5. Cut the cooled biscuit into cakes to lay the pieces on top of each other.

6. Soak the cake with coffee syrup, grease with cream, apply a second biscuit and so on.

7. Lubricate the top with the cream that remains, sprinkle with cocoa.

Tiramisu cake: recipe at home with cottage cheese

Mascarpone can not be bought everywhere, and the price of cream cheese is sometimes staggering, a great dessert is quite expensive. It is the poet who very often uses cottage cheese for cream. You need to choose a greasy, soft, high-quality product.

Ingredients

• 0.5 kg of cottage cheese;

• 4 eggs;

• 200 ml cream;

• 70 ml of milk;

• 1 glass of powder;

• 180 g of sugar in the dough plus 3 tablespoons in the impregnation;

• a glass of flour;

• 2 tsp coffee;

• a little cocoa.

6. Similarly, collect the following layers, use all the ingredients to the end.

7. Lubricate the top, sprinkle with cocoa, then pour with caramel sauce. Leave tiramisu in the cold for impregnation.

Tiramisu chocolate cake: a recipe at home

An amazing version of Tiramisu cake, a recipe at home with detailed preparation and all the subtleties.

Ingredients

• 3 eggs;

• 120 g of sugar;

• 100 g flour;

• 20 g of cocoa;

Cream:

• 200 ml cream;

Tiramisu cake: a recipe at home with oranges and dark chocolate

4. Cool the cake, but it does not need to be removed from the mold.

5. Soak sheet gelatin.

6. Squeeze the juice from all the oranges, mix with sugar, after dissolution combine with cottage cheese and mascarpone. Whisk.

• Cake biscuit can be baked in advance, it can be stored in the refrigerator dry for up to 5 days, it lies perfectly in the freezer for up to six months, you just need to pack cakes tightly, as they absorb foreign odors well.

• If the cream does not want to be whipped and remains liquid, you can use special thickeners for creams.

• Cocoa powder on the dessert will look more original if you use a template in the application process.
